Greek Potato Salad

Cooking Time:  15 mins

Ingredients:

1 kilo cubed  boiled potatoes
1 large thinly sliced onion
1/2 cup cubed cucumber
1/2 cup cubed fresh tomato
1/2 cup chopped parsley
1/4 cup olive oil
1 tbsp white or red vinegar
juice of 1/2 lemon
fresh grounded salt and pepper

1.  Clean and boil the potatoes until tender but not soft.  Strain and let cool.

2.  In a large serving bowl, toss carefully all ingredients;  the potatoes, onion, cucumber, tomato, parsley, vinegar, lemon juice and olive oil, salt and pepper according to taste.
